FRUITY CUP MIX
Build this yummy fruity tower with a base of sliced strawberries at the bottom of the cup. Add a layer of sliced gray smith apple, a layer of whole raspberries, a layered of peeled satsumas or tangerines, some sliced kiwi and layer of sliced bananas. For the dressing, mix together the juice from a satsuma/tangerine, 2 tablespoons of honey and 1 tablespoon of lemon juice. Drizzle this dressing over your tower or even better, drizzle each layer as you build the tower. Best served chilled.
BLACK BEAN SALAD
All you need are tinned or cooked black beans, some chopped feta cheese; 1-2 chopped celery stalks, 1 tablespoon of chopped coriander (cilantro), cooked kernel corn or sweetcorn; half a cucumber – chopped; 2 tablespoons each of olive oil, red wine vinegar and lime juice. Toss the vegetables, cheese and beans together. Mix up the oil, vinegar and lime juice and toss into the salad mix. Spoon into a glass cup or jar. Enjoy.
LAYERED PASTA SALAD CUP
Get a glass jar or cup. Add some chopped greens (eg Spinach) at the base. Then layer with somme cooked pasta and sweetcorn; then chopped tomatoes and red sweet pepper. Next add a layer of sweet corn and chopped red onion and finish with a top layer of sliced avocado.
